Meal Prepped

Today has been a very successful day. After taking my son to school I picked up some produce and headed home.

I took the day to clean, run errands, and meal prep. Meal prepping is something that I have grown to love because the benefits are many.

So for the next few days I don’t have to worry about cooking. I don’t have to worry about skipping meals, or trying to cheat and eat out. Meal prepping for me eliminates all of that.

Here’s what I cooked up

Coconut Rice and Peas
Jerk Tofu and Pineapple
Finished product Coconut Rice and Peas, Jerk Tofu and Pineapple, Spinich with chopped Broccoli, topped with Cilantro and Green Onions.
Brown Rice, String Beans, Smoked Herring with Onion, Tomatoes, and Eggplant.
